This confit pot from L'Aude is an amazing piece that is a difficult find. Caramel drips rained down from above as it cooked in the kiln and as it was turned upside down, you can see the magnificent results here as there is a large puddle on one side. The Mustard glaze of Castelnaudary along with these drips make this a classic example. In their beautiful glazes of emerald greens and fiery mustards, the \"Pots à Confit\" were used to conserve, preserve or transport perishable ingredients used in the kitchen. Pots de confit were used primarily in the South of France for the preservation of meats such as duck or goose for dishes such as cassoulet or foie gras. The bottom halves were left unglazed, due to the fact that the pots were half buried in the ground to keep the contents cooler and fresher. Chips and imperfections help authenticate these pots as they were utilitarian type pieces. Of all the antique confit pots, the ones that are small in size or have a green glaze are the most desirable and hardest to find. France circa 1880
